1lb pound boneless skinless chicken breast, cut into thin strips
1/4 cup of butter
1 1/2 cup uncooked rice
5 carrots, sliced
1 chopped onion
1/2 green pepper
4 cups chicken broth
green onion
In a large skillet, brown the chicken in the butter. Once browned, remove the chicken and add the rice, carrots, onions, and peppers. Cook until the rice is browned and the onions are tender.
Once the rice is brown, add the broth. place the chicken back in on top of the rice mixture. Bring to a boil. Reduce heat, cover and simmer for 20-25 minutes, until rice is tender. Stir in green onion.. Let stand 5 minutes before serving.

This looks so delicious and it’s so easy to make! Have you ever cooked this by substituting with quinoa? In the last few months, I’ve been trying out gluten-free dishes and found quinoa is such a great ingredient to use. I’m going to try your recipe using quinoa and see how it comes out.
