Beefy Bacon Dinner Cupcakes
Okay, not real cupcakes, per se. I picked up a little Black and Decker Shell Maker at a yard sale about 6 years ago for like .50 cents and use it all the time.
I can use just about any dough I want, and it makes perfect little cups I can fill with everything from breakfast fillings to dessert creations. We end up calling everything I make with the shells “cupcakes.” So, we eat breakfast, lunch, dinner and dessert cupcakes around here, a lot.
*If you don’t have a handy dandy shell maker , one, keep your eyes peeled at yard sales, and two, you can use a muffin tin to get close to the same results. Your little cups probably won’t have a crispy inside like the shell maker gives, but I don’t think it will matter a whole lot.*
This is another insanely easy recipe. I cut the fat a little with substitutions- feel free to use full fat versions of the items I swapped out- the results are really similar. Creamy and cheesy, either way. * Makes 8-12 cups, depending on how full you fill cups- when hub is helping, it makes 4! LOL!*
Beefy Bacon Dinner Cupcakes
1 lb. lean ground beef, browned
3 strips bacon, chopped
16 oz. frozen shredded hash browns, thawed
1 can healthy request cream of mushroom soup
1 can refrigerated reduced fat crescent rolls
1/3 cup fat free sour cream
1/2 cup skim milk
3/4 cup low fat shredded cheddar cheese
1 tsp. Johnnie’s season salt
1/2 tsp. garlic powder
pepper to taste
Open the refrigerated dough and unroll entire contents of can onto a large sheet of wax paper. Press all seams together. Using a pastry wheel or a sharp knife, cut into 3” x 3” squares. Pat squares into muffin tins, making sure that dough is well up on sides. Bake according to regular directions.
While the dough is cooking, add ground beef, bacon, hash browns, soup,sour cream, milk, Johnnie’s, garlic powder, and 1/2 cup of the shredded chhese to large microwave safe bowl. Mix well. Microwave on high for 3 to 4 minutes until edges are bubbly.
Now, just scoop hot beef mixture into cups, top with remaining cheese…and enjoy cupcakes for dinner! This goes really well with a cold, crisp summer salad and corn on the cob.The muffin in the back on this pic is actually a toast cup. I always make myself one that way cuz I like the flavor of light rye with the bacon-y filling.





















You had me at bacon and then kept me with the hash browns! All my favorite ingredients in one little package – perfect!

These look amazing! It helps so much when food looks good and these sure do look Yummy! I’ve never used Johnnie’s season salt (wondering what flavors it adds) I’ll look for it next time im at the store.
